Wine Trays
We have earned our esteemed recognition in the Wine Country by preparing our menus with only the finest and freshest ingredients available. Chef Nicholas Johnson and his accomplished entourage of chefs have specifically composed the menus to pair with the wines of Wine Country. There is an additional cost for staff and/or equipment that you may need for your event.

Our “wine and food pairing trays” are a luscious composition of ambient temperature foods prepared with an impressive array of meats, salads, fresh seasonal fruits, cheeses and dessert to complement red and white wines. These trays are prepared at the chef’s discretion depending on the wine being served. The foods are composed on attractive disposable platters. The following is a sample of what we can do:

Red Wine Tray

• Roasted New York Strip Sliced and Served with Sauteed Wild Mushrooms, New England Cranberry Beans with Pancetta, Tomato & Carrot with Tricolor Vegetables with an Herb Olive Oil

• Herb Crusted Leg of Lamb Marinated with Garlic, Tarragon & Parsley Served with French Lentil Salad with Sauteed Bell Peppers and Onions, Topped with Feta Cheese and Noisette Olives Complimented with Grilled Vegetables Tossed with Extra Virgin Olive Oil

• Whole Grain Mustard Glazed Roasted Pork Loin Served with a Tarragon Pinot Noir Jus on Spiced Wild Rice Salad with Pine Nuts and Ginger with Grilled Corn, Mushroom and Asparagus Salad

White Wine Tray

• Sauteed Prawns on Marinated Fennel with a Citrus Aioli Served with a Saffron Rotelli Pasta Tossed with Sauteed Wild Mushrooms, Currant Tomatoes with Shaved Dry Jack Cheese Accomponaied with a Cucumber-Feta Salad with Shaved Bermuda Onion and Mint Dressed with a Lime-Cucumber Yogurt

• Grilled Filet of Salmon on a Bed of Couscous Salad with Pine Nuts and Apricots Complemented with a Tomato Mint Vinaigrette Served with Grilled Haricots Vert Salad with Vine-Ripened Tomatoes

• Chicken Breast Stuffed with Olives, Tuscan Peppers and Fresh Mozzarella Served with Black Bean, Rice and Sweet Corn Salad with a Hint of Cumin and Grilled Sun Burst Squash and Sweet 100’s Salad

Cheese & Fruit Tray
• Trio of Perfectly Ripened Imported or Domestic Cheeses Served with a Seasonal Fruit Extravaganza Composed with Dried Fruits and Nuts

The cost per person is $35.00+ for greater than 20 guests;
$40.00+ less than 20 guests;
$45.00+ less than 10 guests;
and $50.00+ for 5 or fewer guests.
In addition, there is an 18% service charge and 7.75% tax on the service charge.
This price does not include any china, flatware or linens.
If you need any additional items, we can provide them at the rental cost.
These is also a small a fee for the delivery/pick-up depending on the location.
